Hidatei Hanaougi is a ryokan resort in the Hida Takayama Onsen area, on a hillside about 4 km from the town centre in a pine-forest community. The lobby reads modern-zen — wood, big stones and bamboo, with a small stream running through and the cool sound of water. Staff speak good English and greet you with hoji-cha and matcha wagashi. The Western Twin with Private Outdoor Onsen runs 50 sqm at about $460 a night, mixing wood floors with a tatami corner for tea, plus raised twin beds for anyone who doesn't love a floor futon. Out back, the balcony has a private outdoor onsen — a 1.5 by 2 metre hinoki tub filled with clear Hida Takayama Onsen water at 41°C, looking out at the snow-capped Alps in the morning.

Dinner is an 11-course A5 Hida-gyu kaiseki served in a private dining room from 18:00, running about two hours, every small plate set in old Hida ceramics. The Hida-gyu comes hoba-yaki style — grilled on a dried magnolia leaf with sweet Hida miso over charcoal you light yourself, so the miso works into the marbling as it cooks. Alongside it: fresh ayu river-fish sashimi, seasonal yamame and vegetables, an onsen egg, Hida rice, and warabi-mochi dusted with kinako. There's also a large public onsen — split by gender, with a rotenburo, indoor bath, sauna and cold plunge, roughly five times the size of the private tubs, free to use and open 05:30 to 24:00. A 60-minute spa massage with Hida cypress oil runs about $80.

The ryokan sits 4 km from the centre, a 10-minute drive from JR Takayama Station. The free shuttle runs 4 times a day — 07:00, 11:00, 15:00 and 18:00 — and outside those windows a taxi costs about $11. It's a fixed schedule, so it's less convenient if you want to come and go freely, but the trade-off is a genuinely quiet setting in the pines.
