Lijiang food isn't famous for being fancy — it's famous for its honesty and cultural roots, built up over centuries. The Naxi people were originally traders on the Ancient Tea Horse Road, so their food is easy to carry, filling, and boldly flavored — think baba, a fried flatbread that keeps for days, and sour pickled fish. On top of that, Yunnan is home to the world-famous crossing-the-bridge noodles (过桥米线) and Rubing, a milk-curd cheese unlike anything else. Sifang Street and the lanes of Dayan Old Town are a paradise for hungry travelers you shouldn't miss.
#1 Naxi Baba (Lijiang Baba) · Naxi Baba — Lijiang Flatbread
Baba (粑粑) is Lijiang's most celebrated dish — wheat dough mixed with lard or yak butter, rolled into a round disc and baked on a wood-fired clay griddle. It comes savory (Yunnan ham, onion, Sichuan pepper) or sweet (rose sugar, sesame, walnut). It was the travel food of merchants on the Ancient Tea Horse Road, keeping for days without spoiling. At just 8-15 yuan a piece, it's wonderful eaten hot straight off the griddle.
- Look for vendors using a real wood-fired clay griddle — the flavor is far better than the electric-griddle version.
- Try both the savory and the sweet before deciding what to take home; the sweet rose-and-sesame baba is a popular gift.
- Fresh baba tastes best within the first 2-3 hours; after that the texture turns harder.
#2 Yunnan Crossing-the-Bridge Noodles · Crossing-the-Bridge Rice Noodles (Guoqiao Mixian)
过桥米线 (Guoqiao Mixian) is Yunnan's most famous dish, born in the town of Mengzi during the Qing dynasty. It's served with a rich, still-boiling chicken-and-pork broth, and you slowly drop in fresh ingredients yourself — mixian noodles, thin-sliced chicken, assorted mushrooms, water spinach, and a raw egg. The noodles cook in the hot broth at just the right pace. The range of 'sets' means prices run from 20-80 yuan depending on how many sides you get.
- Order a large set and share it — the more varied the sides, the better. Don't order the small set on a first visit.
- Yunnan mixian (米线) is made from pure ground rice with no wheat flour, so the texture is completely different from Thai-style noodles.
- Careful, the broth is very hot — a film of pork fat traps the heat below the surface, so don't taste it the moment it's served.
#3 Naxi Blood Sausage · Naxi Blood Sausage (Xuexiang)
Naxi blood sausage (血肠) is a traditional festival food, made after the ritual slaughter of a pig. Fresh pig's blood, rice, local herbs, and spices are packed into pig intestine, then steamed or fried. The texture is soft and the flavor is balanced, salty and fragrant; grilled over a flame, it picks up a special smoky aroma. It's very different from European sausage because rice is a main ingredient, so it fills you up fast. It's served with fresh chili and a spicy fermented-bean sauce.
- Order it fried crisp (煎) rather than steamed — crisp outside, soft inside, with a more complex flavor.
- Naxi blood sausage is only found in Lijiang and around northern Yunnan; you can't buy it back home.
- Rongpo Restaurant on Xinhua Street in the old town is the most renowned spot for traditional Naxi food.
#4 Lijiang Chickpea Jelly · Lijiang Chickpea Jelly (Doufen Liangfen)
Chickpea jelly (豆粉凉粉) is a popular Lijiang snack, made from finely ground chickpea flour boiled until it sets into a golden-yellow jelly. The texture is soft, slippery, and springy, dressed with a sour, spicy Yunnan sauce — vinegar, garlic, sesame oil, scallion, and red fermented tofu. Eaten cold in summer it's wonderfully refreshing. The Naxi have eaten it for hundreds of years, and it's still popular today.
- Tell them how spicy you want it when ordering, since most vendors add a lot of chili to suit Lijiang tastes.
- At just 5-10 yuan a bowl, it's a perfect snack while strolling the old town.
- Choose a stall with more locals eating than tourists — the flavor will be more traditional and fresher.
#5 Yunnan Rubing Fresh Cheese (Yunnan Milk Cake) · Rubing — Yunnan Fried Milk Cake
Rubing (乳饼) is Yunnan's fresh cheese, made from real goat's or cow's milk that's curdled using the sap of a local vine instead of an enzyme. The texture is firm and it doesn't melt when heated, which makes it ideal for frying or grilling. The popular way to eat it is cut into sticks and fried in oil until golden, then sprinkled with salt and dried bird's-eye chili, or steamed with Yunnan ham. The flavor is soft and slightly rich with a faint milky aroma — completely different from Western cheese.
- Rubing is better fried crisp than steamed or raw; ask the shop to fry it fresh and hot before you eat.
- You can buy raw Rubing to take home — it keeps 2-3 weeks in the fridge and is sold at fresh markets and supermarkets.
- Rubing is higher in calories than you'd think, because it's full-fat milk that hasn't been skimmed.
#6 Naxi Fish and the Three-Course Banquet (Naxi Sanhesui Banquet) · Naxi Three-Course Banquet (Sanhesui)
Sanhesui (三叠水), or the three-course banquet, is a Naxi feasting tradition still carried on today. It's served in three rounds, starting with dried and pickled items such as sour pickled fish (Naxi Pickled Fish), years-aged Yunnan ham, and mixed mushrooms; then the cooked dishes, such as clay-pot steamed chicken (Steam Pot Chicken), mashed tofu with Yunnan greens, and local vegetables; and finishing with rice porridge or steamed rice. It's the eating experience that reflects Naxi culture most clearly.
- Book ahead at Rongpo Restaurant (荣坡餐厅) on Xinhua Street, or a traditional Naxi spot in Shuhe, since they often fill up in the evening.
- Naxi pickled fish is sour and salty — eat it as a side with rice, not on its own, or you won't understand the flavor.
- For the full experience, order the Sanhesui set for 2-4 people, priced at 120-200 yuan per set.
